    Hallmark wins again...


    Back from a wonderful weekend in Raleigh that was extended a bit because of the threat of bad weather. It never appeared, but, uhm, better safe than sorry, yes? I had a wonderful Valentine's day, and hope you all did too.
    Now I have tons of work to catch up on (I want this project FINISHED already!), so I'll just have leave you with a recipe for the best grilled cheese sandwich I've ever had (and I don't like grilled cheese!).

    One slice nice Italian bread (or pumpernickle, rye- anything but your typical wonderbread)
    bruschetta or any thin sliced meat
    nice cheese- something on the salty side, provalone or feta
    tomato- optional
    basil
    rosemary
    oregano

    On slice of bread, lay meat flat in thin layer. Cover with thin tomato slices. If cheese is sliced, cover w/ thin layer; if crumbly like feta, sprinkle over. Season with italian spices to taste: I like lots of rosemary and a little basil (especially if it's fresh). If using toaster oven, just throw it in and bake until cheese is melty. If using conventional oven, bake at 350 until bread is slightly crunchy (about 5 minutes) and then broil for another couple minutes until chese is melty.

    Really excellent with tomato soup.

    Elija made these for me yesterday and I just about died- I embellished on the recipe a bit today when I got back. Yum!
